College Football Is Back GO HAWKEYES.....
That's right people college day is back, which here in Iowa is a big deal and should be everywhere else too. Lets face it college sports are just more exciting to watch than the pros, maybe because the athletes seem more repeatable, whatever the reason that's a debate for another day. How this relates to us who live low carb high fat lifestyles (#LCHF) is that we have to be ready to BRING IT!!! When it comes to tailgating foods, so we can show our everyone our food rocks.
I have uploaded a few tailgating recipes in the recipe section of the blog for everyone to try out. Here are a few tips to making your own great low carb high fat (LCHF) tailgating foods.
1. Don't shy away from using cheese. Its a great way top a casserole, finish a soup, top a burger (over vegetables of course), or just eat as a quick snack.
2. Grilling is a common tailgating favorite, bring extra vegetables to grill with. Make zucchini boats for hotdogs or brats. (that would be done by hollowing out the zucchini quickly grilling it on each side just to start to soften it. Now add the cooked hotdog or brat, all your toppings, any cheese, melt it, remove it from the grill and enjoy). I suggest eating it in a hotdog boat container.
3. Breakfast casseroles to get things started. These are as simple as getting all of the ingredients you like in an omelet added to a 9x13 baking dish then filling it with eggs and a touch of heavy cream. Bake it until it is just about set (slight wiggle to the casserole) then top with cheese. Bake until the cheese is fully melted and started to brown then remove from the oven and serve.
4. Make the mok tails instead of partaking in the alcohol to be the real hero at the end of the day who can get everyone home safely.
